Guilt-Free Chocolate Peanut Butter Cup Recipe

Chocolate Peanut Butter Cup Alternative
This is probably MY FAVORITE healthy alternative recipe that I have found for CHOCOLATE.  So Yummy!

These Guilt-Free Chocolate Peanut Butter Cups are AMAZING!

Now, just because they're healthy, does not mean you should eat 10 of them.  They should still be a treat, but at least you can rest assured that it was good for you.

It's a super simple recipe, so here goes.

4 Tbsp Organic Coconut Oil
8 Tbsp Regular Chocolate Shakeology or other Protein Powder
1 Tbsp Vanilla
PB2 (Or Almond/Peanut Butter)
Sea Salt (Optional)
4 Mini-Cupcake Liners

Melt the coconut oil in a mug in the microwave.  Mix in the Shakeology and Vanilla.  Spoon the chocolate mixture into 4 mini-cupcake liners.  Sprinkle just a little sea salt on top (optional).  Mix the PB2 with water and place a dollop on top of each chocolate cup.  Place in the freezer for at least 15 minutes and ENJOY!

In honor of ‪#‎TransformationTuesday‬ I thought I'd share my own transformation from last year.

Over 90 days, I lost 29 lbs and 21 inches by joining an Accountability group and becoming a Coach. Unfortunately, weight loss is not a one and done type thing. As they say, the rent is due every month! So due to injury and the holiday season, I am a little fluffier than I would like to be.
HOWEVER, I am recommitted and re-energized to not only get back to that "After" photo but to surpass it! Not only focused on losing weight, I want to improve muscle tone and strength.

Who Cares About Company Culture or Employee Culture - What about YOU Culture?

I know lots of people talk about company culture and employee culture, but what about YOU culture?  What about the culture you create in your everyday life.  I am an avid reader (okay Audible listener if we're getting technical) and it has made me realize that we have a culture of our very own.  And this culture, the one that we personally create, is more powerful than any other one because it is the lens with which we view all others.

My theory is that we have our own culture, in our life that we have knowingly or unknowingly created by the people we surround ourself with and the stuff that we expose ourselves to everyday.

Think about what information you absorb on a daily basis.

What blogs do I read?
What kind of news do I listen to?
What shows do I watch?
What books do I read?
What movies do I go to?
Whose opinion do I ask or seek out?
Are my friends the type that motivate or inspire me?  Or are they more likely to complain and lament something in their lives?
What do I focus on in my day-to-day life?
Am I worried about the government and the economy or am I growing myself to contribute to positive change?

It all makes a difference.  Little by little.  I made a change several months ago and STOPPED listening to the NEWS or listening to the radio.  I replaced it with positive audio books during my commutes.  At first, I was worried I'd be missing out on important events, but what I realized is most of it is NOT IMPORTANT, and most of it is NEGATIVE.  And it might not seem like it, but it was negatively affecting my mood or at the very least, not improving it.  And for the big news, I can guarantee, someone always told me about it.  So if it is important, you'll find out.

Look at the pic above.  Who do you think is leading a happier, more successful life?  Becca or Roger?  Can you see how they have each created their own culture?  If theirs was a company culture, which one would you want to work for?  If you wanted to be friends with one of them, whom would you choose?  Who are you choosing to be?

Book Club with Raina - You Are a Badass by Jen Sincero

So we're reading the book You Are a Badass by Jen Sincero in one of my awesome Fun and Fit Challenge Groups this month, and I always enjoy sharing my favorite takeaways in a series I've dubbed Book Club with Raina.  I'm taking this EXERCISE directly from pages 58 and 59.

Have you ever found that you tend to beat yourself up when things go wrong? Start paying attention to HOW YOU TALK TO YOURSELF. What runs through your mind? What happens inside you when you see someone totally succeeding at something you'd love to do but have never let yourself try? What do you think and feel when you walk up to a group of really good-looking, successful people?
Or when you fall off the wagon, stop exercising, and eat everything in sight?
Or when you try your best to pull something off and you fail?
Or when you let a friend down?
Or when you forget your dad's birthday?
Or when you stub your toe on the kitchen table for the 10th time?
Or when you snap at someone who didn't quite deserve it as harshly as you gave it to them?

We've gotten so used to our negative knee-jerk reactions to ourselves that we never think to question them. We simply take them as the truth BUT they're not the truth and it's important to recognize this! How we speak to ourselves MAKES A DIFFERENCE.

WE ARE OUR OWN COACHES. Can you imagine if you had a coach who constantly told you everyday that you sucked?  No. That would be a horrible coach, but that's what you're doing to yourself. BE THE COACH you would want for someone you love. What kind of coach would you want mentoring your child or your mom?  Start to love yourself. Be kind.  Once you do, you'll be able to do all the amazing things you've always wanted to do.

Everything on the left in the picture above are things I've said to myself and on the right are ones I have come up with to replace them. It's been a tough journey but I've been working hard at this for a couple months now, and I have been able to tell a major difference in my mood and overall happiness.  It's made me more productive and a nicer person to be around.  Go ahead.  Give it a try.  I can't wait to hear what you think!

How Do You Start Your Day?  Today I could hear my mom's voice in my head this morning as I got ready.  I was feeling tired and not really excited for the day.  I was lying in bed, procrastinating about getting up, thinking of all the things on my to-do list.  I was lamenting the effort it was all going to take to do everything I needed to do.  I was in the middle of wishing I could just stay in bed all day, when, like it often does, my mom's voice popped into my head, "Well of course if you think you're going to have a blah day then you will have a blah day." 

Well that's just not acceptable in my book. I did not want to seem ungrateful, and as my mom often is, I knew she was right.  I was not setting myself up for success with my attitude.  So I started saying to myself, "Today is going to be awesome.  I am grateful for this day that God has blessed me with and I will not waste it.  You are going to kick ass. You are incredibly blessed and you are going to have fun tonight. You have been asked to speak on a panel at SDSU in the company of some great people on a topic you know a lot about - Boosting Your Career Through Social Media. You got this.  You are going to deliver value and help a lot of people today.  Get excited about how you are going to inspire others!"

AND it worked.  Not that I was 100% there but I sure was in a better place than I was a couple minutes ago, and it was enough to get me out of bed and ready to tackle the day.  Sometimes that is all you need.  The thoughts in your head are powerful, but MY FAVORITE PART?  When my baby woke up cranky, as I often can understand since I love my sleep too, I found myself passing on this knowledge to her.  She was frowning as I came down the stairs.  She was sitting on the couch.  My husband had just put on her shoes.  I bent down, and I hugged her extra long.  I told her, "I know we're both tired and wish we could go back to bed, BUT you know what?  We're both going to have awesome days today.  We're both going to have so much fun."  Then I pulled back, looked at her, smiled and starting bopping to an imaginary tune.  She quickly jumped in and we started giggling.  She smiled up at me and it was priceless.  Her whole mood had changed.  I thought, "Wow, thanks Mom. That change in mindset was totally worth it.  I am so glad I could pass it on to my daughter."  It was a beautiful moment.

My FailProof Daily Checklist For How to Feel Awesome and Happy

Want in on my secret for feeling awesome?  It's super easy to do.  I promise.  The only thing is, it's even easier not to do, which is why I have this checklist literally hanging on the bathroom wall for me to evaluate how I did each day!  

It never fails.  If I have had a less than stellar day, I can point exactly to one of the items on my checklist and realize I did not do it.  I LOVE being able to correlate it so easily.  It's like knowing there's a formula, or an answer key.  It will not solve everything but it solves a lot.

So here it is, My Daily Checklist for Awesomeness:
1. Exercise - Sweat is good.
2. Water - 8 glasses
3. Personal Development - Listen to a great book on Audible during my commute.
4. Nutrition - Eat Clean.  I LOVE my superfood shakes.
5. Sleep - 8+ hours please

I swear when I get all of these, it's really hard not to feel good. And when I've already done almost all of them early in the morning, I've set myself up for success for the rest of the day.  My perfect day starts with a 5am workout, a superfood shake for breakfast, and a great motivational book on the way into work.  BAM!  Instant grin from ear to ear, especially if I got 8 hours of sleep the night before.  It's like the fountain of youth.  It's magic. 

If I start the day like this, then it means I'm a nicer person.  I tackle my work with amazing energy.  I spread the awesomeness around, and I feel invigorated and purposeful.  And you know what, what you put out into the world gets reflected back at you.  Other people are nice to me.  Other people feel great and spread the love. Try it.  Observe how the world changes.  Do your own experiment if you don't believe me.
