Now I do apologize because I am the type of person in the kitchen who never measures so the below are guesstimates, BUT it always does turn out great. Most important though is the fact that these ingredients are all pretty healthy and the recipe is pretty easy. Best of all you can enjoy it guilt-free!
Here are the Basic Ingredients (2 Servings):
1 Bag Frozen Mangoes (around 2 cups)
1 cup unsweetened Vanilla Almond Milk (less if you like it thick)
Handful of Dried Mangoes (5 pieces)
Squirt of Lemon Juice
Sprinkling of coconut flakes (optional)
Place all the ingredients in the blender and mix till smooth. If the consistency is too thin, add more frozen fruit. If it is not blending well, add a little more almond milk. Feel free to get creative. I have used dried pineapple, frozen acai, frozen bananas, frozen strawberries etc. Basically the formula consists of frozen fruit, almond milk, and some sort of dried fruit. I think the dried fruit makes it. You end up with tiny, chewy bits of sweetness that really make the whole dish! My husband and one year old daughter love this recipe, and I make it all the time.
