Baked Butternut Squash Casserole Recipe

So it's Wednesday again, which means yours truly is in charge of making dinner for the whole family (husband, parents, and sister).  Tonight I tried making a Baked Butternut Squash Casserole.  And the lesson I learned was that I should probably start measuring things.  I personally was not a fan of the end result, though I will say the butternut squash part was delicious.  I expected it to taste more like mac and cheese, and unfortunately I think I added too much milk.

My husband and sister claimed to like, so  I guess I would be open to making it again.  Next time, I'll add more noodles and potentially mash up the butternut squash.  I still feel like it was missing an ingredient but I cannot put my finger on what it is.  I think it needed more kick.  I tried salt and peppering it which definitely helped.

Overall, I'm enjoying my adventures in the kitchen.  For a girl who does not like cooking, I think I am doing pretty good.  Perhaps when I upgrade from novice, I'll know what that missing ingredient is.  Do you have a favorite casserole dish?  And one that is considered healthy?  My husband has high cholesterol, thus my recent dabbling in vegetable based recipes.

  1. Thanks for this great recipe. I wonder how many calories this is? It looked delicious nevertheless and I'm going through the recipe right now. I'm vegan, do you think almond milk will work with this? I've been trying to look for more wholesome and low carb recipes and I'm glad I found your site. I've been losing weight for some time with the 3 Day Military diet and right now, I'm in for the long haul. Since ending the diet, I've been eating more greens and drinking more water. I've weaned myself from sugar since the diet didn't permit it, so I'm glad for that. For more info here's the link
